![]() Rating: - good low-carb cookbook and informationI am a cookbook "reader" and I really liked the information at the beginning of the book, with sections on sweeteners; starches, flours and thickeners; and fats and oils that were very helpful. I also liked the extended section giving sources for sometimes hard-to-find ingredients. The author has many creative low carb recipes - including use of pumpkin and rutabagas as substitutes for white potatoes, and use of spaghetti squash for its more familiar counterpart. The recipes are great, some are time consuming but worth the time. Our favorite is the Eggplant Casserole, delicious. I would have liked to have seen more photographs though. Rating: - Excellent recipes, but confusing to useThis book is filled with great information about low-carbing, has some very wonderful recipes and is a welcome addition to my cookbook library. I turn to it often for inspiration. Although the recipes deserve a five-star rating, I had to give it four stars because it is not terribly well-organized (at least I find it hard to find certain recipes) and it is overloaded with a hundred pages of dessert recipes that rely on way too much Splenda for my taste. There aren't very ... Read More Rating: - A Wealth of InformationCarb Wars contains a wealth of information and research on the subject of low carb cooking. It is beautifully photographed and obviously the creation of an artist who is passionate and well-informed about her subject matter. I look forward to trying every recipe in this book. Rating: - This is a Wonderful CookbookThis is a wonderful cookbook! It is the best my wife and I have found for people who are trying to reduce carbs. We have tried a lot of the recipes, and found that they work and that the food tastes great (especially the desserts). Nearly every page has sidebars with interesting tips or other information that are fun to read. We have used other low-carb cookbooks (Atkins, Protein Power, and South Beach oriented) but we like this one best by a lot. There is also an interesting introduction describing ... Read More
