 Rating: - Marshmallow Heaven...How could you not love this book? First of all it gives you a recipe so you can forgo the corn syrup, and then it gives you fabulous ideas and imaginative recipes. I've been making my own marshmallows for years, but have never made fluff or Peeps.(I made the grape fluff first, my kids pb&j will never be the same!) I've made 3 batches of marshmallows so far: the standard recipe, coconut and honey and all were so easy to make and delicious. The recipes seem pretty fool proof, as long as you have a candy thermometer to make sure you are hitting the right temperature and a stand mixer as you have to mix the mallows for about 12 minutes and they really thicken up as they cool! So easy!I have made several recipes and they all came out great. I will never buy marshmallows again! The mallomars were delicious - even though I used a british biscuit instead of making my own. Similar to a graham cracker but sweeter, round in shape. Very clear directions and easy to follow.
